Kodo millet is believed to have been domesticated in India some 3,000 years ago. It is found in tropical and sub-tropical regions. The fiber content of the whole grain is very high, and the millet contains high amount of protein. Kodo millet is a good substitute to rice or wheat. Protein, fiber, and mineral content are much higher than the major cereals like rice. It can be cooked just like rice or ground into flour. It provides balanced nutrition, unlike polished white rice. Kodo Millets are rich in B vitamins, especially niacin, B6 and folic acid, as well as the minerals such as calcium, iron, potassium, magnesium and zinc. Kodo millets contain no gluten and is good for people who are gluten intolerant.
